When you're camping with limited cookware and utensils, a one pan meal is the way to go. Packed with protein, veggies, healthy fats, and plenty of flavour, this one pan meal cooked in the Bushbuck Tempest Frypan is a guaranteed way to fuel your body at any time of the day.
Feel free to switch out the sausages for any protein you prefer, and the veggies for whatever you have on hand. I use a portable egg container to make sure they don't crack on the journey (especially when we're going off-road). And yes, those are tinned potatoes. Sometimes convenience is king when you're camping. You just have to drain, chop, and cook them—all the hard work is done for you.
When you arrive back at camp after a long day of hiking, fishing, or simply lazing in the sun, this one pan camping recipe is sure to hit the spot. It's also a great option for breakfast when you know you've got a big day ahead of you.
Recipe by Kaelah's Wild Kai Kitchen
Serves: 1-2 people Time: 10-15 minutes
Protein of your choice, I used breakfast sausages
1/2 onion, diced
2 cloves of garlic
1 can of potatoes, drained and chopped
Handful of cherry tomatoes, diced
1/2 tsp of cumin
1/2 tsp of smoked paprika
Pinch of salt and pepper
2 eggs
Optional toppings:
Sliced avocado
Crumbled feta cheese
Chopped fresh herbs
Chili oil
Heat your skillet over low to medium heat, making sure not to burn your food. Add a drizzle of olive oil to the skillet.
Brown your protein for a few minutes, then add in the onion and garlic. Stir for a few more minutes.
Add in the potatoes, tomatoes, and spices, reduce the heat and cook for 4-5 minutes until everything is softened and cooked through.
Make a couple of wells in the mixture, crack an egg into each well. Cover the skillet and cook until the eggs are done to your liking.
Remove the lid, turn off the heat, and top with feta, herbs, and chili oil if desired.
